If you haven’t heard, the buffalo chicken wing cupcake is sweeping the nation as becoming America’s new favorite cupcake! It’s so popular in fact, that it’s quite possibly become the party treat of the 2012 Super Bowl that happened yesterday night.
I know my kids want to try the chicken wing cupcakes, and I figured some of your kids might want to too. Here is one way too cook the now famous chicken wing cupcakes:
Buffalo Chicken Cupcake Recipe
Makes approximately 10 cupcakes
Ingredients:
For the cake: ½ cup hot sauce, ¼ cup unsalted butter, ½ cup crumbled blue cheese, 1 cup brown sugar, ¼ cup + 2 tablespoons of sour cream, 1 egg, 1 cup flour and 1 ¼ teaspoon baking soda.
For the frosting: 2 ounces crumbled blue cheese, ½ cup unsalted butter and 2 cups powdered sugar.
Directions:
For the cupcake itself:
- Preheat oven to 350 degrees.
- On medium heat, place your hot sauce and butter into a medium-sized saucepan and heat until butter is melted.
- Add the blue cheese and mix periodically until blue cheese is melted.
- Remove from heat and mix in the sugar.
- In a small bowl, wick together the sour cream and egg.
- Once the hot sauce mixture has cooled down enough to touch, mix in the sour cream mixture into the hot sauce mixture.
- In another small bowl, mix together the flour and baking soda.
- Fold the flour mixture into the hot sauce mixture.
- Fill the cupcake liners ¾ the way full.
- Bake for 20 minutes or until the toothpick check come out clean.
For the frosting:
- Mix blue cheese on high until smooth.
- Add the unsalted butter and mix on high speed again until light and fluffy (about 3 minutes).
- Next, slowly mix the powdered sugar until fully combined.
- Pipe or spread the frosting onto the cooled cupcakes.
Lastly, add your cooked and sauced buffalo wings to the top of the cupcake and serve! Keep in mind you can control the amount of hot sauce, how hot the hot sauce is and the amount of blue cheese you add.
